Fish Rice Recipe -This dish works for those who are dairy-free, gluten-free, vegan, and vegetarian, and while its ingredients list looks long, it really is only made up of veggies, legumes, and a handful of Cajun spices.
1⁄2 teaspoon ground coriander
2 teaspoons garam masala
1⁄2 teaspoon chili powder
2 tablespoons plain flour
salt and pepper
4 (125 g) fish fillets
2 tablespoons vegetable oil (or sunflower)

1 cup peas (frozen)
1⁄4 cup coriander (coarsely chopped)
3 cups basmati rice & wild rice mix (cooked)
Combine ground coriander, garam masala, chilli powder and flour on a large plate and season with salt and pepper.
Dust fish in flour mixture to coat both sides, shaking of excess.
Heat oil in a large frying pan over moderately high heat and add fish skin side down and cook for 2-3 3 minutes each side or until just cooked and drain on paper towels.
Meanwhile cook broccoli and peas in a medium saucepan of boiling water until just tender and then drain.
Add vegetables and coriander to the rice and season with salt and pepper.
Serve fish with rice mixture.
